Royal Kesar Phirni (Saffron Rice Pudding)

Ingredients

  • ½ cup basmati rice (soaked)
  • 1 liter milk
  • ½ cup sugar
  • 6–7 saffron strands soaked in warm milk (buy Half Spoon Kesar)
  • 1 tsp cardamom powder
  • Almonds & pistachios for garnish

Method

  1. Grind rice into coarse paste.
  2. Boil milk, add rice paste, stir till thick.
  3. Add sugar, saffron milk, and cardamom powder.
  4. Pour into earthen bowls, garnish with nuts.
  5. Chill and serve.
